Beef, Pea, and Cauliflower Rice Stir-Fry

1 tbsp coconut oil
1 lb Ground Grass-Fed Beef
2 cloves garlic minced
1 leek sliced
1 head cauliflower
1 tbsp ginger minced
1 1/2 cup snap peas cut into 1 inch pieces
3 tbsp coconut aminos
1 tbsp toasted sesame oil
Cut the cauliflower into large pieces and place in a food processor. Pulse to process the cauliflower into rice sized pieces. Don't over process or the cauliflower will become mush.
Add coconut oil to a large skillet over medium heat. Add the beef, leek, garlic and cook for 10 minutes, until the beef is browned.
Add the ginger when the beef is almost done, slightly pink still. Add the cauliflower rice, peas and coconut aminos and cook for 3 - 5 minutes. Stir often.
Remove from heat and add the sesame oil, make sure to stir thoroughly to mix.
